Mango Sambar Recipe| Yummy Yummy Sambar
Mango is high in vitamins A and C as well as fiber and antioxidants. Ingredients
- Oil – 2tspn
- Fenugreek – 1/4tsp
- Mustard seeds – 1/2 tsp
- Curry leaves few
- Onion – 1
- Tomato – 1
- Brinjal – 1
- Raw mango – few chopped with skin
- Tamarind – small size
- salt to taste
- Water 2 cups
- Turmeric Powder _ 1/2tsp
- Corriander Powder – 1/2tsp
- Sambar Powder – 2tbsp
- Chilli powder _ 1 tsp (optional)
- Toor dal – 1/2 cup
- Garlic Pods – 4
- Hing powder – 1tsp
- Corriander leaves for garnish
HOW TO MAKE RAW MANGO SAMBAR
- Wash and pressure cook the toor dal with 2 cups of water for 4-5 whistles or until it is soft and mushy.
- Take a kadai , Heat oil and add Feenugreek ,mustard seeds and saute well.
- Add Onion and tomatoes, cook for 1min until tomatoes raw smell goes.
- Now Add veggies, here i have added Brinjal.
- Add Tamarind water with Spice powder
- Let cook for 4 to 5mins until the raw smell goes
- Now add Mango pieces and cook for 2min.
- Check whether mango is cooked well
- Add salt
- Finally add Smashed boiled tooor dal and hing powder.
- Mix well and cook for few mins.
- Garnish with fresh coriander and serve hot with steamed rice.
This recipe is very easy to make and very healthy too. You can add more veggies if you need, for example you can add ladies finger, drumstick or potato. Adding more veggies in sambar will give more flavor and tasty too.
Note
According to sourness of mango adjust the quanity of mango. Here I have added coriander powder which is secret ingredient. This will give extra flavour and taste.
This Raw mango sambar is also best combination for idli and dosa.

Q1) What to do to make sambar thick?
Ans) Take 1tbspn of besan flour in a small bowl and add 3tbspn water and make a liquid consistence. Add this mixture in sambar in a final stage and switch off the flame.
