Brinjal Rice Recipe| Vangi Bath Recipe with Homemade Powder

 Vangi Bath Recipe is also known as Brinjal Rice. Vangi bath is prepared using spice powder and brinjal. I used homemade powder to make this Vangi bath.

This dish is delicious and simple to prepare. This vangi bath powder can be kept for up to a month in the refrigerator. When making lunch, it will be quite helpful. This meal is a Karnataka recipe. The recipe for vangi bath/brinjal rice has several variations. This is a great and extremely easy variation. The vegetable brinjal is quite healthy. It helps our digestive systems and is beneficial to our stomachs.

I make this dish for a kid’s lunchbox whenever I’m feeling really lazy. I make vangi bath powder once a month and keep it in an airtight jar. You can also keep it refrigerated. You can get vangi bath powder in department stores also. For this dish, papad is sufficient as a side dish. Garlic and onions are not used in this recipe. Every week, I prepare this meal for my kid’s lunchboxes, as they love it so much.

If you have left over rice, then you can prepare this dish.

Ingredients

  1. 1&1/2 cup cooked rice
  2. 6 Brinjal
  3. 1 Potato
  4. 4tbspn Coconut oil
  5. 1/4tsp Turmeric powder
  6. 2tsp Mustard seeds.
  7. Few curry leaves

For Vangi Masala Powder

  • 4tbsp Coriander seeds
  • 2tbsp Channa dal
  • 5 dry red chilies
  • 1tsp oil

Instructions for Vangi Bath Masala Powder

  1. For vangi bath masala powder:
  2. Take a fry pan
  3. Heat oil
  4. Add coriander seeds, channa dal and red chilies.  
  5. Fry all until turns golden brown.
  6. Allow to cool and grind fine powder.
  7. Take a fry pan and heat oil.
  8. Add Mustard seeds
  9. Add curry leaves and saute well.
  10. Add brinjal and potato. Mix well and cook for few mins.
  11. Add turmeric powder when vegetables are half cooked.
  12. After vegetables completely cooked, add vangi bath masala powder as required and mix well.
  13. Add hing powder and mix well. Simmer the flame and cook until nice aroma comes.
  14. Now add cooked rice and mix well.
  15. Finally add salt as required and mix it.

  • 1 mixer grinder
  • 1 spatula for mixing

Ingredients

Notes

You can add sambar powder for extra flavor.
Instead of brinjal you can use any other vegetables.
For nice aroma use coconut oil.

For vangi bath masala powder:

Add coriander seeds, channa dal, red chilies and oil

Fry all until turns golden brown.

Allow to cool and grind fine powder.Vangi Bath Masala powder ready.
