Lunch box beetroot rice

Ingredients

  • 1tsp Ghee
  • 2tsp Coconut oil
  • 1 bay leaf
  • 2tsp biryani masala powder
  • 1 onion
  • 2 tomatoes
  • 1tsp Ginger garlic paste
  • 1 big size beetroot chopped
  • 1/4tsp Turmeric powder
  • 2tsp Chili powder
  • 2tsp Coriander powder
  • Salt to taste.
  • 2 cups Water
  • Chopped coriander leaves.

Instructions

  1. As always soak the basmati rice for 30 mins.
  2. Take a kadai or pan. Heat oil and ghee
  3. Add bay leaf allow it to roast
  4. Now add biryani masala powder and saute well.
  5. Add sliced onion and mix well. Cook until onion colour changes.
  6. Now add ginger garlic paste and mix well. Keep the flame in medium and cook.
  7. After ginger garlic paste raw smell goes, add chopped tomatoes. Mix well and cook for 1min
  8. Add turmeric powder, chili powder and mix well.
  9. Now add chopped beetroot and cook for 2mins.
  10. Add salt to taste and cook for few mins.
  11. In this stage switch off the flame and transfer the mixture in rice cooker vessel.
  12. Don’t place electric rice cooker plate when we do pulao or biryani recipe.
  13. Place it in rice cooker and switch on. When we switch on the rice cooker, automatically warm mode indicates with light.
  14. Now add basmati rice and mix well. When you mix basmati rice with spatula, always mix gently so that rice wont broke.
  15. After mixing rice, add water. Now change the mode warm into cook.
  16. Allow to cook for a while. Add coriander leaves and close the lid.
  17. When pulao gets ready, it will show warm mode.
  18. After 10 to 15mins open the lid and serve.
Electric cooker pulao

Best Side dish for this recipe is cucumber onion raita with papad or chips.

Notes

Adjust the quantity of chili powder as per your taste.
You can do this recipe in pressure cooker also. Procedure is same.
